Brie Cranberry Pastry Wreath

Ingredients

  • 150–200g brie, sliced into 1/4 thick pieces
  • 1 × 320g pack puff pastry sheet
  • About 4-5 tbsp cranberry jam (or caramelised onion chutney, etc.)
  • 1 egg, beaten
  • Optional topping: rosemary sprigs

Method

  1. Preheat the oven to 190c fan. Line a large shallow or flat baking tray with baking paper.
  2. Place the puff pastry sheet on a chopping board and slice it in half lengthwise, so you have two long strips.
  3. On one strip, spoon 2–3 tablespoons of cranberry jam in a line along the pastry, keeping a 1/2 - 1 inch border along both long edges.
  4. Spread the jam evenly.
  5. Lay the brie slices on top of the jam so they sit along the centre section of the pastry.
  6. Brush the border with beaten egg.
  7. Fold the pastry over the filling to enclose it, then pinch the edges to seal.
  8. Press along the seam with a fork to secure it, and trim any rough edges.
  9. Repeat the filling and folding process with the second pastry strip.
  10. Cut slits along each filled pastry log, roughly 2 inches apart, being careful not to cut the brie!
  11. Arrange one pastry strip on the tray in a semi-circle. Add the second strip to complete the circle, shaping as needed.
  12. Press the ends together and seal with a fork.
  13. Brush the entire wreath with the remaining egg wash.
  14. Bake for 15–20 minutes, or until golden and crisp.
  15. Top with optional rosemary sprigs for a festive touch, or serve as is.
