Brie and Caramelised Onion Frittata

Ingredients

  • 9 eggs
  • About 3 tbsp caramelised onion chutney
  • 65g brie, sliced
  • 60g grated cheddar
  • 1/2 tsp finely chopped rosemary
  • Salt and pepper

Method

  1. Preheat the oven to 180c fan / 200c conventional.
  2. Line a 9×9-inch baking tin with baking paper, or grease an ovenproof skillet.
  3. In a large bowl, whisk the eggs with salt and pepper, then add the chopped rosemary.
  4. Pour the egg mixture into the baking tin.
  5. Sprinkle the grated cheddar evenly over the top.
  6. Dollop about 1 tsp of caramelised onion chutney at regular intervals over the mixture.
  7. Scatter the brie on top.
  8. Bake for about 20 minutes, or until the frittata is just set in the centre.
