Ingredients
90g melted butter (or vegetable/sunflower oil)
200g dark brown sugar
1 large egg
200g plain flour
½ tsp flaky sea salt (or ¼ tsp fine salt)
2 tsp baking powder
1 medium apple (about 100g), peeled and diced into small cubes
Method
Preheat the oven to 175c fan. Grease and line an 8x8 inch square baking tin with baking paper.
In a large bowl, whisk together the melted butter, brown sugar, and egg until smooth and evenly combined.
Add the flour, salt, and baking powder. Stir until just combined - the mixture will be thick.
Spread the batter evenly into the prepared tin, smoothing the top with a spatula.
Scatter and lightly press the apple cubes into the surface of the batter.
Bake for 25–30 minutes, or until golden brown and the edges are set. A toothpick inserted in the centre should come out clean or with just a few moist crumbs.
Cool in the tin before slicing into bars. Enjoy warm or at room temperature.
