These salted chocolate chip oat pancakes are higher in protein and fibre than normal pancakes! Depending on what I have in the fridge I either make these with cottage cheese or thick strained greek yoghurt (cottage cheese will add a bit more protein to the recipe though!).

Salted Chocolate Chip Oat Pancakes

Ingredients

  • 70g oats
  • 1 tbsp flax seeds
  • 1 tsp baking powder
  • 1 tsp vanilla extract (optional)
  • 2 eggs
  • ¼ tsp flaky salt (adjust to taste)
  • 160g cottage cheese
  • Handful of dark chocolate chips/chopped dark chocolate (about 70% cocoa)

Method

  1. In a blender add the oats, flax seeds, baking powder and salt. Blitz until a powder has formed.
  2. Add the vanilla, eggs, and cottage cheese. Blend until smooth.
  3. Heat butter or oil in a frying pan over a medium heat.
  4. Pour small amounts of batter onto the pan to form pancakes (it should make enough for about 6!). Sprinkle chocolate chips on top and press them in slightly and cover with a little extra batter to prevent burning.
  5. Cook for 2-3 minutes, then flip and cook for another 1-2 minutes until golden.
  6. Optionally top with extra flaky salt, a drizzle of honey or maple syrup, and more chocolate chips.
