Chocolate Cottage Cheese Cookies

These healthy chocolate cottage cheese cookies are fudgy, rich, and secretly packed with protein (nearly 5g per cookie!). They’re so easy to make and ready to bake in under 10 minutes. They’re also high in fibre, low in sugar and naturally sweetened!

Chocolate Cottage Cheese Cookies

Chocolate Cottage Cheese Cookies

Ingredients

  • 125g cottage cheese
  • 30g honey
  • ½ tsp vanilla extract
  • 50g ground almonds
  • 15g cocoa powder
  • 1 tbsp plain flour
  • Pinch of salt
  • 50g chocolate (melted for dipping, or chopped to mix into the dough)

Method

  1. Preheat the oven to 180°C (160°C fan). Line a baking tray with parchment paper.
  2. In a bowl, mix together the cottage cheese, honey, and vanilla until smooth.
  3. Add the ground almonds, cocoa powder, flour, and salt.
  4. Stir in the chopped chocolate if using. Alternatively, reserve the chocolate to melt and dip the cookies after baking.
  5. Divide the mixture into 9 equal portions using a small cookie scoop or spoon. Roll into balls and place on the prepared tray.
  6. Flatten each ball slightly with a fork.
  7. Bake for 14–16 minutes, or until set. Let the cookies cool on the tray.
  8. If using melted chocolate for dipping, dip the cooled cookies in melted chocolate, and allow to set before serving.
