How to store

Transfer to an airtight container and keep in the fridge for 3-4 days.

10-Minute Feta Chickpea Tuna Salad

Ingredients

  • 120g feta cheese, crumbled
  • 240g cooked chickpeas, drained and rinsed
  • 2 x 145g cans tuna, drained
  • 1 pepper (any colour), diced
  • 100g cherry tomatoes, halved or quartered
  • 1 small red onion, finely chopped
  • 50g pumpkin seeds
  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1/2 tsp dried oregano
  • Salt and freshly ground black pepper, to taste

Method

  1. In a large bowl, add the tuna, chickpeas, peppers, red onion, pumpkin seeds and dried oregano.
  2. Drizzle over the olive oil and balsamic vinegar. Season generously with salt and pepper. Mix well.
  3. Fold in the crumbled feta.
  4. Serve immediately or refrigerate for up to 3-4 days.
