A one pot noodle dish has to be one of my favourite things to make. I love adding a bit of spice from scotch bonnet chilli, but you can use whatever your favourite chilli is! This is great served with lots of chopped spring onion on top as it brings a welcome freshness to the dish.

Garlic Chilli Cheese Noodles

What ingredients do you need for this dish (includes possible substitutions)? 

Sesame oil: can be substituted for whatever your preferred oil is! 

Garlic: I like 2 cloves in this dish but add as much as you want. 

Chilli: my favourite chilli to use is scotch bonnet (I love the heat and aromatic flavour it has), but use whatever you like! 

Noodles: I usually either use instant ramen noodles or egg noodles, but really you can use any quick cooking noodle!

Cheddar: grated mozzarella would also be delicious! 

Light soy and dark soy: both add colour and seasoning to the dish. 

Honey: balances the saltiness but you can use your preferred sweetener!

Chilli crisp oil: adds additional heat and depth of flavour!

Garlic Chilli Cheese Noodles

Ingredients

  • 1 tbsp sesame oil
  • 2 garlic cloves, finely chopped
  • 1 tsp chopped scotch bonnet chilli
  • 1 packet instant ramen noodles/egg noodles (about 100g dry weight)
  • 250ml boiling water
  • 30g grated cheddar
  • 1/2 tbsp light soy sauce
  • 1/2 tbsp dark soy sauce
  • 1 tsp honey
  • 2-3 tsp chilli crisp oil
  • Topping: chopped spring onion, extra chilli crisp oil

Method

  1. In a medium sized frying pan over a medium-low, add sesame oil. Once hot, add the garlic and chilli. Cook for two minutes.
  2. Increase the heat to high then add the noodles and boiling water. Simmer until the noodles are cooked and water mostly evaporated.
  3. Reduce heat to low then add the grated cheddar, soy sauces, honey and chilli crisp oil. Mix well to combine.
  4. Top with spring onion, and that’s it!
