I’m often craving cauliflower cheese but want something a bit healthier and easier to make, this is a great substitution and makes a delicious side dish.

What’s the best way to store this dish? 

You’ll loose a bit of the crisp of the potato if you put it in the fridge, but if you don’t mind about this (I still think it’s delicious!), then place in an airtight container in the refrigerator. Reheat either in the microwave, or in the oven.

Can this be frozen?

I wouldn’t recommend freezing this!

Cheesy Potato Cauliflower

Cheesy Potato Cauliflower

Ingredients

for the cheesy potatoes

  • 1 large cauliflower, broken into small florets
  • 300g potatoes, sliced into thin rounds (about 1/4 inch)
  • 75g grated cheddar
  • 1 tsp ground garlic
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 30g roasted almonds, roughly chopped
  • 1 spring onion, finely chopped
  • 2 tbsp chopped parsley
  • Oil, salt, pepper

for the dressing

  • 100g greek yoghurt
  • 1 garlic clove, peeled
  • 30g parmesan/vegetarian italian hard cheese
  • 2 tbsp apple cider vinegar
  • 1 tbsp extra virgin olive oil

Method

  1. Preheat the oven to 220c/200c fan. Add 1-2 tbsp of oil to two large shallow baking trays.
  2. In a small bowl mix together the ground garlic, smoked paprika, dried thyme and a good pinch of salt and pepper.
  3. On one of the trays, add the cauliflower. And on the other tray, add the sliced potatoes. Sprinkle the spice mixture over the potatoes and cauliflower. Mix it all together really well with your hands.
  4. Sprinkle the cheddar over the cauliflower and potatoes. Then place both trays in the oven for about 25 minutes, or until golden.
  5. In a blender, add all the ingredients for the dressing and blend until smooth. Depending on how thick your yoghurt is, you may need to add about 1 tbsp of water. Alternatively, you can also mix the ingredients in a small bowl - just crush the garlic and grate the parmesan before you mix the ingredients together!
  6. In large bowl add cauliflower, potatoes, roasted almonds, spring onion, parsley and drizzle over the dressing. And that’s it!
