Roasted Tomato Beans

Ingredients

  • 500g cherry tomatoes
  • 5 garlic cloves (not peeled)
  • 1 tsp smoked paprika
  • 1/2 tsp flaky salt
  • 1/2 tsp ground pepper
  • 1 tbsp cream cheese
  • 35g parmesan/vegetarian Italian hard cheese
  • 1 400g can butter beans, drained
  • Topping: 1-2 tbsp extra virgin olive oil, 1 tbsp chopped parsley/basil

Method

  1. Preheat the oven to 220c/200c fan. Put the cherry tomatoes, garlic cloves, smoked paprika, salt and pepper into a baking tray. Place in the oven for 25-30 minutes, or until the tomatoes and garlic have softened.
  2. Add the tomatoes into a blender, squeeze the garlic cloves in (discard the peel) then add the cream cheese and parmesan. Blitz until smooth.
  3. Taste for seasoning, it may need more salt or pepper.
  4. Head the sauce in a pan over a medium heat, add the butter beans and cook until warmed through. Top with extra virgin olive oil and chopped parsley/basil. And that’s it!
